Lehigh Valley’s newest food truck bringing gourmet burgers and fries to a business and event near you
The Lehigh Valley’s newest food truck invites you to “Yummm anywhere you are,” including at local businesses, festivals and private events.
Lehigh Valley Restaurant Group, operating 21 Red Robin restaurants in eastern and central Pennsylvania, including four in the Lehigh Valley, a few weeks ago launched the chain’s first food truck, which has already become a staple at local businesses such as Yergey Brewing in Emmaus and events such as Food Truck Thursdays at the South Mall in Salisbury Township.
Customers of the truck can enjoy a condensed version of Red Robin’s regular menu, featuring popular items such as the Whiskey River BBQ burger, teriyaki chicken sandwich and boneless wings.
“We plan on having the truck basically rove around our entire operating footprint, which is eastern and central PA,” said Mike Axiotis, president and CEO of Lehigh Valley Restaurant Group. “But we really are trying to focus heavily on launching here in the Lehigh Valley first since this is where our corporate office is and we have a good concentration of restaurants here. [The truck] could be booked for private events, corporate events, birthday parties, weddings, rehearsal dinners, bachelor parties and team-building events.”
Axiotis purchased the Red Robin-branded truck from the chain’s Denver-based corporate headquarters, which bought the then-new vehicle in 2019 to customize it and use it to celebrate Red Robin’s 50th anniversary by having a crew drive it across the country to distribute free bottomless fries in major cities.
“I approached them about buying it and utilizing it as a real food truck, one that you would serve more than just French fries,” Axiotis said. “We’d serve our burgers and all of our famous foods out of it, and utilize it to actually drive revenue and also branding. So, they’re allowing us as a franchisee to be the test franchisee to go out and monetize this and see if it’s successful or not.”
Burgers, starting at $11.99 and served with steak fries, include popular selections such as the bacon cheeseburger, Banzai burger and veggie burger.
Other menu highlights include 3 Clucks (chicken tenders) with steak fries and Freckled lemonade (blend of Minute Maid lemonade and strawberries).
Truck rental rates for private parties are customizable, depending on what food items that the customer wants, how far the truck has to travel and how long the truck will be on-site, Axiotis said.
Once COVID-19 restrictions relating to large-scale events are lifted, Axiotis also plans to bring the truck to regional festivals such as the Allentown Fair, Bloomsburg Fair and Musikfest.
“We also want to use it for community outreach as well,” Axiotis added. “So, if there’s a charity that we can tie in to where we’re feeding people for goodwill, we’re going to use it for that. For example, let’s just say that there’s a natural disaster and there’s first responders that are on the scene, we can go and feed the first responders.”
